The "Authentic seafood analogues" project by the two young researchers, who have doctorates from the Department of Health Sciences and Technology, is funded by a Pioneer Fellowship.
The goal of the two researchers is to produce vegan seafood that equals or even surpasses the animal original in terms of nutritional values.
